Another Muffin? Pumpkin/Banana Oatmeal Muffins

Why am I offering you another muffin recipe?

Well, just look for yourselves, they are beautiful. And they taste great too.

I know it's not Christmas yet, and Thanksgiving preparations are just beginning, but I couldn't hold back any longer. I had to break out my favorite snowman plate.

I love snowmen, and the person (Joyce Coressel) that gave me this plate last year for Christmas knows that. So if you see this plate placed many times in my blog between now and Christmas, that is why. I LOVE SNOWMEN!!

Speaking of Thanksgiving and Christmas in the same post just brought to mind an idea. These muffins would be perfect for the Black Friday shoppers.

Oh yeah, make them the night before and grab some (on your way out the door) on your early morning (Black Friday) madness run....

I have participated in the Black Friday shopping only once. Will I do it again? NEVER!!

I just have to share this with you. I was so excited....

I am a member of Just a Pinch recipe Web site. I entered my pumpkin cookie recipe and everyone loved it so much that the owner of the site awarded me with a blue ribbon.

When I received the blue ribbon I thought it was virtual only, but to my surprise I was wrong. I received a package from Just a Pinch the other day in the mail. My official blue ribbon was tucked inside.

I am now proudly displaying it on my refrigerator because it has a magnet on the back.

I did the *Happy Dance* when I received that ribbon. MY VERY FIRST ONE!!

The Nestle Toll House Best-Ever Cookies cookbook is one of my favorites.

This was given to me by my mother.

How do I know that? Because she wrote in the front of the book "To my daughter Angie, from Mom".


And here I am once again tweaking and adjusting the recipe to my liking. Yes, I wrote in my cookbook.

This recipe caught my attention because once again, no sugar.

A no sugar muffin is such a treat for breakfast.

Ha, yesterday I introduced you to Aunt Millie's Whole Grain Muffins, today I give you my own creation of muffins. Aunt Millie's have sugar, mine don't.

My muffins are great with any kind of preserves or apple butter.

I adjusted the pumpkin ingredient so I could add my bananas. Two bananas went in this recipe.

Here it is all mixed up and ready to be added to the cupcake liners.

Ready to enter the oven.


Pumpkin/Banana Oatmeal Muffins

1 c. all-purpose flour
1/2 c. wheat flour
1/2 c. quick or old-fashioned oats (I used the old fashioned)
1/2 c. chopped walnuts
2 tsp. baking powder
2 tsp. pumpkin pie spice
1/2 tsp. baking soda
1/2 tsp. salt
1/4 c. solid pack pumpkin
2 ripe bananas
2 eggs
1/2 c. honey
1/3 c. apple juice
1/4 c. vegetable oil
Old fashioned oats for sprinkling

Combine flours, 1/2 c. oats, walnuts, baking powder, pumpkin pie spice, baking soda, and salt in large bowl.
Combine pumpkin, bananas, eggs, honey, apple juice, and vegetable oil in medium mixer bowl. Mix till everything is combined and bananas are mashed. Add to flour mixture; stir just until blended (remember this is a muffin, do not over mix or they will be tough). Spoon into 12 greased or paper-lined muffin cups. Sprinkle with oats.
Bake in preheated 375 degree F. oven for 23-27 minutes or until wooden pick comes out clean. Remove muffins to wire rack; cool slightly. Serve warm. Makes 1 dozen.

  1. This one looks great! It looks yummy and indulging too. I should try this muffin for our friend's party. Chocolate syrup or some cream cheese frostings to make it yummier.

  2. Since there is no sugar in this recipe, a cream cheese glaze or frosting drizzled on top would be perfect. What a great idea!!

  3. Wow! I think the sweet is not so sweet for diabetic people.Thanks for the recipe. I totally agree that cream cheese frosting will make it yummier.
