Chocolate Beer Muffins

 Yes, you read that title right.
Chocolate Beer Muffins
 It is time to relax, 
kick up your feet,
and let the best of both worlds come together....
Chocolate & Beer!
These are fantastic with maple syrup poured over them.
Instant breakfast!
And who says you can't have beer before noon? 
Chocolate Beer Muffins

3 c. buttermilk baking mix (I used Trader Joe's)
2 TBS sugar
1 c. chocolate chips
1 c. beer
cinnamon/sugar for sprinkling

Preheat oven to 350 degrees F. Place cupcake liners in the muffin tin.
In a large bowl, combine baking mix, sugar, chocolate chips and beer; stir until smooth.
Scoop batter into paper liners (I used a large cookie scoop). Sprinkle each muffin batter with cinnamon/sugar.
Bake in preheated oven until golden brown, about 15-18 minutes.

Crock Pot Chicken Caesar Sandwich

 I found this recipe (in Pinterest, of course) at Cozycakes Cottage,
and when you visit there you will see why I wanted to make this
I didn't have any pretty leaf lettuce.....
 But I had bacon on hand.
Chicken and bacon go great together, and add a little Caesar Dressing....
But wait!
Since Thanksgiving is over,
and I know you have lots of left-over turkey in the freezer,
this would be a great way to use up that turkey.
Great idea, right?
I thought so too.
I will for sure be making this again.

Crock Pot Chicken Caesar Sandwich

2 lbs. boneless skinless chicken breasts
About 1 c. water
1/2 - 1 c. of your favorite bottled Caesar dressing, adjust amount to your taste
1/3 c. shredded Parmesan Romano Asiago mix.
Ground pepper
Cooked and crumbled bacon

Place chicken in crock pot with water. Cover and cook on low heat for 4-6 hours. Make sure you check on the chicken here and there, because you don't want it to dry out. When chicken is done, remove from the crock pot and drain the water. Shred the chicken. Place chicken back in crock pot and add dressing and cheese. Mix well and cook for another 30 minutes to heat. Serve with bacon sprinkled on top in hamburger buns.

Cranberry Butter Recipe

Today is Thanksgiving Day and I would like to 
send my blessings to each and every one of you.
May your day be filled with
and memories.
 It's kind of late for a recipe, but there may still be time to whip this up.
Cranberry Butter for your dinner rolls.
If there's not time to fix this today for Thanksgiving,
there is always Christmas.
It's right around the corner, you know.....
Cranberry Butter

1/2 c. butter, soft
1/4 - 1/2 c. cranberry sauce with orange (depending on your like of cranberry)
2 TBS honey

Mix all the ingredients together using a food processor or mixer.

No-Bake Cookies: Because You Need a Break Right About Now

 How many of you have started prepping your 
Thanksgiving meal for tomorrow?
If I was making a meal this year, I would have started
prepping yesterday. I love getting my sides and
desserts ready and out of the way. I even make up
cheese and veggie trays ahead.
This is one dessert that is sure to win over your guests.
Who does not like no-bake cookies?
 And they are so easy to throw together.
A small cookie that packs a BIG punch.
No-Bake Cookies

2 c. sugar
1 tsp. vanilla
1/4 c. baking cocoa
pinch of salt
1/2 c. milk
1 stick butter
1/2 c. peanut butter (I used crunchy)
4 packets instant oatmeal (I used maple/brown sugar)
And enough old fashioned oats to equal 3 c.

Mix in pan: sugar, cocoa, milk, butter, salt
Heat to boiling on medium heat
Take off of heat and let it cool for 1 minute
Add vanilla, peanut butter, and oatmeal - stir well
Drop by TBS onto wax paper (or however big you want your cookie)
Let cool completely

Crock Pot Beef with Brown Rice

 Okay, let's slow down a bit.
The holidays are just around the corner,
and who has time to cook?
Not me!
So if I don't have time, you don't have time either.
That is just a judgement I am calling....
 With this dish you can throw everything in the crock pot and go
about your daily hustle and bustle preparing for guests, 
and gatherings.
Let this cook on low for 6 - 8 hours,
throw a bag of steam-fresh brown rice in the microwave,
and you have dinner on the table with no fuss.

The inspiration for this recipe comes from The Pastry Chef's Baking.

Crock Pot Beef with Brown Rice

1 pkg. stew meat
1 c. beef broth (I used 1 c. water and the recommended amount of beef soup base)
1/2 c. soy sauce
1/3 c. brown sugar
1 TBS olive oil
3 garlic cloves, minced
1/4 c. to 1/3 c. cornstarch
1/4 c. sauce from the crock pot after being cooked
Hot brown rice

Place beef in a crock pot.
In a small bowl, combine broth, soy sauce, brown sugar, oil, and garlic. Pour over beef. Cook on low for 6-8 hours.
In a cup, stir cornstarch and sauce from the crock pot until smooth. Add to the crock pot. Stir well to combine.
Cover and cook an additional 30 minutes on high (the sauce has to boil for it to thicken.
Serve over hot brown rice.

Pinterest & Spontaneous Treasures Thursday

 Are you ready for another Thursday menu?
This one is going to be great
and fulfilling.
 There is something about roasted vegetables that makes me
all giddy.....
I think it's the texture and flavors that just scream 'warm' and 'comforting'.
I found this recipe at The Southern Lady Cooks
I can't wait to make this!
All I have to do is run out and grab a green pepper.
Everything else I have on hand. 
Another nice thing about this meal, 
you should have pretty much everything in your kitchen
(except the green pepper, like me),
and you will only have to worry about cleaning
one cutting board and knife.
Chop all your veggies first, and then the meat.

One pan
Covered with foil
Can't get any better than that.....
With all the different flavors in the roasted vegetable dish,
I want a minty ending.
These mint chocolate cookies should do the trick.

Thanksgiving Favorites (10)

Usually Thanksgiving is full of food.
Food that you stuff yourself with and then pass out on the couch.
At my holiday dinners, the parents provide the meat and then the
kids have to fill in the rest of the meal. 
I thought I would try and make things easy for you this year.
I have put together some pretty easy dishes that you can take
to your Thanksgiving dinner.
