Spring? Easter? Zucchini Ribbons

Oh my goodness!! Just wait until you see what this is.

I stepped outside yesterday and there were three bunnies in the neighbor's yard.

Does this mean it's officially spring? Or does it mean that Easter is approaching quickly?

These are zucchini ribbons.

Did you know that zucchini ribbons can be used in place of pasta?
Now you do....

Sean was asking for Johnsonville Brats for dinner, and since I am watching what I eat, I had to come with a solution to by-pass the brat on a bun, piled high with onions and mustard (that's how Sean ate them).

This was my solution: Zucchini ribbons.

All you have to do is use your potato peeler to create the ribbons. Run the peeler down the length of the zucchini and you have imitation pasta. You will want to stay away from the middle of the zucchini because that is where the seeds are. Just peel the ribbons close to the seeds.
Place the ribbons in a colander and shake salt on them. You can let them sit in the salt brine for up to 24 hours. I placed mine in the salt brine around lunch time and then used them for dinner.
You will have to rinse the salt off before using them.

You don't want to cook the ribbons to death either. What I did was placed them in a heated dry skillet just long enough to heat them through.

I sliced my brat, placed it on top of the zucchini ribbons, and then used a little spaghetti sauce to flavor. Oh, and I also sprinkled feta cheese on top, but I missed photographing it.

This was one of the most amazing things I have ever eaten. I don't think I will ever eat another piece of pasta again.

  1. Isn't that just an amazing 'changeover' for pasta! Your pictures look great...I can't begin to imagine what this tastes like, but I will certainly have to try it. Won't be long and there will be plenty of zucchini at our farmer's markets to test this out. Thanks for sharing another healthy dish.
