It seems like I have been running a bit behind.....
I did celebrate yesterday (on the day of celebration) though.
You are just getting my information a day late.
You'll have to save this and make it for next year's Cinco de Mayo.
Cinco de Mayo is most usually celebrated in the state of Puebla, where Zaragoza's triumph occurred, although other parts of the country also take part in the celebration, including the United States.
The victory of Mexicans over European invaders during the Battle of Puebla is definitely a means for celebration.
And where there is celebration, there is food.
Celebration traditions in Mexico consist of military parades, recreations of the Battle of Puebla, and other celebrations which include colorful costumes, dancing, and eating.
EATING: If you like Mexican foods, spices, and seasonings, you will definitely love this pulled pork.
The spices and flavors are the perfect combination to enjoy a bit of Mexico.
1 pork roast (fat trimmed), (I used a pork roast with a bone)
2 tsp. ground pepper
1 large onion, diced
1 can tomatoes with jalapeƱos
1 tsp. cayenne pepper
1 tsp. garlic salt
2 tsp. ground cumin
2 TBS pork soup base
Cut roast into large pieces (I cut mine into three pieces, and cut through bone). Rub the roast with ground pepper.
Place roast pieces in slow cooker, add tomatoes, onion, and spices. Cover roast with water, and slow cook on high for 8 hours.
Make sure you keep an eye on the water level (I didn't have any problems with it, but make sure the roast doesn't get dry).
When roast is done cooking, with slotted spoon with holes lift out the roast pieces, discard any bones, and shred meat. Spoon out tomatoes and onion to add with the shredded meat, and as much liquid as you would like to keep meat moist.
Place in buns and cover with mustard (that's the way I ate it).....

I love pulled pork sandwiches! Mmmm...now I am craving one! This looks delicious! I love the addition of the jalapenos and cayenne pepper. :)
ReplyDeleteWe found out that this was really good sprinkled with cheese and wrapped in a flour tortilla. You could probably add more toppings too (green pepper, tomatoes, lettuce, etc...).
