
Have you ever had one of the those days when you put a pork roast in the oven for dinner, and something comes up where you have to shut the oven off after two hours of baking, and run out the door?
Of course not!
What was I thinking?
That only happens to me.....

Well, let me tell you what happened. I put the roast in the oven expecting to eat it for dinner. Mid day I find out that my refrigerator has stopped working. It has been screaming for weeks, and I was doing one of those "hold your breath" every time the door was opened. Guess what? I don't have to hold my breath anymore. I had to run out of the house, shut off the oven, and leave the roast right where it was, to buy a new frig.
So, now what do I do with a roast that didn't get eaten?
Shred it and make pork salad. Yup, make it just like chicken salad.

Chop up one bunch of green onions.

And make a special sauce.
Just wait till you see what I put in my sauce.....
Pork Salad
1 pork roast, cooked and shredded
1 bunch, chopped green onion
Sauce:
1 c. mayonnaise
1 TBS Dijon mustard
1 TBS horse radish sauce
1 tsp. Franks Red Hot
1 tsp. balsamic vinegar
lots of crushed black pepper
Mix the sauce into the shredded pork, place on bread, top with spinach, and you have yourself a pork salad sandwich.
Looks delicious! Mmmm.... I have never made a pork salad ala chicken salad. Good idea! Hope you like your new fridge!
