Weight Watchers Monday: Sunshine Salad

 Okay, first off, I would like to apologize for being absent for so long.
I have started a new job and relocated to Columbus, Ohio.
My moving has consisted of my bed being hauled in a pick-up truck,
boxed items being hauled in a car,
and purchases being completed here in Columbus (TV, food, etc...).
So yeah, just a little busy these last couple weeks.
But I feel I'm at a point now where I can get back to my commitments
to you.
To celebrate my return, how about some of this low calorie Sunshine Salad?
 When we diet, or watch our calorie intake, 
sometimes we crave something sweet. 
Right?
I know I do. 
That is one of the battles of dieting....
So I paired fruit with chocolate.
Can't go wrong with chocolate, right?
This Weight Watchers recipe allows you to eat 1 full cup at only 3 WW points.
This is what I did:
Weight Watchers Sunshine Salad
1 (15 oz.) can mandarin orange slices
1 (20 oz.) can pineapple chucks in heavy syrup
1 small jar maraschino cherries
1 (1 oz.) box sugar-free white chocolate pudding

Pour fruit in a large bowl. Do not drain the pineapple. Drain half of the liquid off the mandarin oranges. Drain maraschino cherries. Pour the pudding powder over fruit and mix well. Chill in fridge before serving.

Weight Watchers Monday

 I don't know about you, 
but I'm loving these Weight Watcher recipes....
Since I am bringing a service to you,
I am actually helping myself.
And I owe you all a great big THANK YOU.
Just yesterday I went to get dressed, 
and when I put on my belt I noticed I can move it one notch smaller.
Isn't that awesome?
And I am going to share a little secret with you....
Only the fans of A'lil Country Sugar will be in on this secret.
But you can share if you want.
Let's all spread the good news and tricks and tips to eating better.
Here is the secret:
I found two Web pages that are assisting me in the quest to drop some pounds.
Here they are:
As long as you stay within your Points Target, get some exercise, 
you should be able to drop some weight.
I have.....
 You will never be able to tell this is a WW recipe.
It is so good.....
Refreshing,
Creamy,
Satisfying,
And makes the perfect dessert for any meal.
The crust is a little different. 
It is not the graham crust that you would normally find under
a cream pie.
I made this crust by using Ritz honey wheat crackers,
some yogurt,
a small amount of brown sugar (Splenda Blend),
and some cocoa powder.
Yeah, it doesn't have the crunch of grahams, but it sure is good.
You can taste just a hint of chocolate under that Key Lime..... 
 This pie is so easy to throw together.
Just bake the crust for 5 minutes,
mix your ingredients,
and dump in the crust.
And it only has to chill for 2 hours.

WW Key Lime Pie (3 WW points per serving)

Crust:
1 1/2 c. crushed fine Ritz honey wheat crackers
2 tsp. baking cocoa powder
3 TBS Key Lime nonfat yogurt
1 TBS Splenda Blend brown sugar

Preheat oven to 350 degrees F.
In a medium bowl, mix cracker crumbs, cocoa powder, yogurt, and brown sugar. Press mixture into a 9 inch pie plate.
Bake for 5 minutes.

Key Lime Filling:
1 (1/16 ounce) package sugar-free lime gelatin
1/4 c. boiling water
1 (8 oz.) container fat-free whipped topping
2 (6 oz.) Key Lime Pie fat-free or light yogurt

In large bowl, dissolve gelatin in boiling water.
Stir in yogurt with wire whisk.
Fold in whipped cream with wooden spoon.
Spread in crust.
Refrigerate for at least 2 hours.

Recipe: Cherry Cheesecake (No-Bake)

Happy Christmas Eve

 This pie came about when I was trying to find a place to use
those awful pre-baked frozen pie crusts. 
You know, the ones in the grocer freezer that demands you take
shortcuts when creating your foods.
Never again will I buy frozen pie crust.....
But they served the purpose for this pie.
You can also buy the pre-made graham cracker crusts,
or make your own for this pie.
Just don't buy the frozen ones......
Typed above is my little piece of advice for you today.
This was a very good no-bake cheesecake,
and I loved the idea of using Jell-O.
It added lots of flavor, and the cheese cake part set up nicely.

No-Bake Cherry Cheesecake

2 Prepared (9 in.) baked pie crusts (make your own, or use a graham cracker crust)
1 (6 oz.) package pineapple Jell-O
1 c. boiling water
1 (8 oz.) package cream cheese, soft
1 c. white sugar
1 tsp. vanilla
3 TBS lemon juice
1 (12 oz.) can evaporated milk
1 (21 oz.) can cherry pie filling

Dissolve pineapple jell-o in boiling water, set aside to cool.
In a medium bowl, beat together the cream cheese, sugar and vanilla. Stir in the pineapple jell-o mixture and lemon juice. 
In a separate bowl, whip evaporated milk. I used a hand whisk and whisked it till it was foamy. Fold into the cream cheese mixture. Pour into the prepared pie crusts.
Chill for 4 hours, then top with cherry pie filling.
