Left-Over Master: Stuffing and Baked Beans

Have you ever heard anyone say, "I am the master of disaster!", or "You are the master of disaster"?

Well, that is not the case here. I have been told that I am the "master of left-overs".

I am also a master at packing a dishwasher......"Is it full? Nope!"

I can take one meal and turn it into something different for at least three days......

No one ever knows they are eating the same thing they just ate yesterday.

The onion zucchini bread: Went from served with soup to stuffing.

All I did was crumble it up, added some whole wheat toast that I had frozen (left-over from BLT's).

Added the stuffing ingredients, and WHALLA! Stuffing for dinner.....

Stuffing

8 c. crumbled onion zucchini bread
5 slices, diced whole wheat toast
1 tsp. dried sage
2 tsp. dried rosemary
3/4 tsp. dried Thyme
1/2 c. dried cherries
2 c. chicken broth
8 TBS butter, melted
2 eggs, lightly beaten

Add all your dry ingredients together in one large bowl. Add all your wet ingredients together in a medium bowl. Add wet to dry, stir until everything is moistened. Pour into a greased casserole dish and bake at 350 degrees F. for 30 to 40 minutes.


The baked beans were an accidental masterpiece (according to my son).

I made him a plate to take to work, and he ended up passing his plate for all his friends to try.....

He gets his sharing technique from his mom.

The baked beans were created from the left-over bean soup.

And yes, let lightening strike me down, I didn't save the broth.

I strained the bean soup through a strainer until all I had left were the beans and no liquid.

I made a sauce for the beans and then baked them for about 30 to 40 minutes.

Baked Beans

I am going to estimate, 2 - 3 c. beans from bean soup

Sauce:

1/3 c. sugar
1/3 c. packed brown sugar
1/4 c. ketchup
1/4 c. BBQ sauce of your choice
1/4 c. honey
1 TBS Balsamic vinegar
1 TBS prepared mustard
1/2 tsp. pepper
1/2 tsp. chili powder

Mix all ingredients together and pour over beans. Stir. Bake at 350 degrees F. for 30 to 40 minutes.

That was our left-over dinner along with Sean's signature sirloin steaks on the grill.

And yes, we did have the beans for one more meal. I used them to make beans and franks.....

"Do you not know that the unrighteous will not inherit the kingdom of God? Do not be deceived: Neither the sexually immoral nor idolaters nor adulterers nor male prostitutes nor homosexual offenders nor thieves nor the greedy nor drunkards nor slanderers nor swindlers will inherit the kingdom of God."
1 Corinthians 6:9-10

I recently read a sermon, yes, I read sermons sometimes. It kind of keeps me in focus of my everyday thoughts. But anyway, the sermon went something like this: The Minister was preaching on a section from the sixth chapter of First Corinthians, and he addressed his comments on Verse 9 where the apostle says, "Do you not know that the unrighteous will not inherit the kingdom of God? Do not be deceived; neither the immoral, nor idolaters, nor adulterers, nor homosexuals, nor thieves, nor the greedy, nor drunkards, nor revilers, nor robbers will inherit the kingdom of God. And such were some of you" (1 Corinthians 6:9-11).
The Minister was so moved by those words, "such were some of you", that he stopped and said to the congregation, "This was the make-up of the church at Corinth. These people had come out of this sordid background. Many of them, perhaps, still were struggling with much of the aftermath in their lives of these evil things. I am curious as to how many of you here have some of these things in your background."
Then he did a bold thing, he asked the congregation to stand if they had anything in their background that was listed in the scripture. He wanted to know how much his church was like the church at Corinth.
The Minister didn't know it, but there was a young man present in the church for the first time. When the young man realized that 2/3 of the congregation was standing, he thought to himself, "These are my kind of people!"
Would you stand and be noticed for unrighteousness? I would! I know there is a lot of unrighteousness in my life that needs mending, but I will get there. What about you?

  1. You certainly ARE the Master of Leftovers! I can't believe how much you create...amazing! This looks terrific. I made the onion zucchini bread earlier this week, but now it's gone. It was wonderful! Wish we lived closer so I could sample some of your amazing dishes. Enjoy a great weekend Friend.
