Let's Play Dress-up: Magi Olives

Are you an olive lover?

I am!!

My local grocery store used to have an olive cart that sat in the deli department.

I loved that olive cart: feta cheese stuffed olives, blue cheese stuffed olives, Greek mix olives, olives with garlic, etc.....

But I found out that not everyone loves olives as much as I do. The olive cart was not a top selling item, so they took it away (inside I am silently crying).

But I have found a solution to my long lost olive cart.

These are called Magi Olives.

I ran across this recipe in one of my old magazines and instantly fell in love.

I will create my own olive cart at home.

So let's dress up our olives all you olive lovers out there.....

Magi Olives

2 1/2 c. assorted pitted olives (I used Spanish green and Greek kalamata black olives)
1/4 c. extra virgin olive oil
1/2 TBS grated lemon rind
1/2 TBS fresh lemon juice
1/2 TBS grated orange rind
1 TBS fresh orange juice
1/2 TBS minced garlic
1/2 tsp. fennel seeds
1/4 tsp. crushed red pepper
1/4 tsp. dried oregano

Stir together olives and remaining ingredients in a bowl. Cover and chill at least 8 hours. Let stand 30 minutes or more at room temperature before serving.
