Crock Pot Beef with Brown Rice

 Okay, let's slow down a bit.
The holidays are just around the corner,
and who has time to cook?
Not me!
So if I don't have time, you don't have time either.
That is just a judgement I am calling....
 With this dish you can throw everything in the crock pot and go
about your daily hustle and bustle preparing for guests, 
parties,
and gatherings.
Let this cook on low for 6 - 8 hours,
throw a bag of steam-fresh brown rice in the microwave,
and you have dinner on the table with no fuss.
What do you think?

The inspiration for this recipe comes from The Pastry Chef's Baking.

Crock Pot Beef with Brown Rice

1 pkg. stew meat
1 c. beef broth (I used 1 c. water and the recommended amount of beef soup base)
1/2 c. soy sauce
1/3 c. brown sugar
1 TBS olive oil
3 garlic cloves, minced
1/4 c. to 1/3 c. cornstarch
1/4 c. sauce from the crock pot after being cooked
Hot brown rice

Place beef in a crock pot.
In a small bowl, combine broth, soy sauce, brown sugar, oil, and garlic. Pour over beef. Cook on low for 6-8 hours.
In a cup, stir cornstarch and sauce from the crock pot until smooth. Add to the crock pot. Stir well to combine.
Cover and cook an additional 30 minutes on high (the sauce has to boil for it to thicken.
Serve over hot brown rice.
