Chili ~ It's Oh So Chilly ~ It's A Good Time For Chili

 How many of you are like me and bite at the bit during the 
summer just to see it cool down enough for a big
bowl of chili?
WOW!! That was a mouthful.....
But better yet, I loved this mouthful of chili since
the weather is fit for it.
 My mom!
I really think her and her husband have some kind of food fetish.
I'm serious!
They could probably be listed really close to being HOARDERS.
I love going to my mom's just to look through the food that she
has collected. And the funny thing is, there is just the two of 
them. They are not feeding anyone but themselves.
1 + 1 = 2
But anyway, the last time I was there I found this 32 oz. carton
of Roasted Red Pepper and Tomato Soup.
AH HA!! I'm thinking chili.
My thoughts became reality....
And isn't it amazing what an old broken chair can do for photos?
Chili

2 pounds ground beef, ground turkey, ground chicken, ground sausage (your choice)
1/2 of an onion, diced
1 packet chili seasoning mix
1 reg can diced tomatoes (your choice of flavors), (undrained)
1 reg can black beans (rinsed and drained)
1 reg can chili beans
1 reg can red kidney beans
1 - 32 oz carton Roasted Red Pepper & Tomato Soup
Salt & Pepper to taste
(Also, if you don't like the consistency of the soup, you can add tomato juice to thin it)

Brown the ground meat and onion together until meat is cooked thoroughly (drain if there is a lot of grease). Add chili seasoning and let it cook into meat. Add all the remaining ingredients, cover with a lid and let simmer on low for about an hour. Serve with peanut butter sandwich, of course.

  1. Angie, your chili sounds wonderful! We just had our first-ever chili cookoff at our church (where my dh pastors) yesterday! It was sooo fun! We had 9 chilis and all kinds of desserts, breads, etc. made for a fun day! I posted some pics on my blog if you wanna check them out. Hope you're doing well! Haven't stopped by lately, life has been to busy! :)

  3. Oh that soup you found in your mama's pantry found the perfect place to be! What a great addition to some soup. I'm just betting your mom keeps the pantry stocked just for you...=) (Ours is pretty full too and there's only 2 of us....I want to be ready to make anything!=) My hubby loves chili. If I ever see the soup on the shelf, we'll be enjoying it this way too. Thanks -
