Is There Anything Better? Greek Tomato Salad

Is there anything better than a salad that you just cannot stop eating?

Tomatoes, Vadalia onion, Kalamata olives, feta cheese, and Greek vinaigrette. I could eat this stuff forever....

Vadalia onions are in season in my area. I wait, and wait, and wait for these beauties to come to me. And when they do, I buy them like crazy and put onion on everything.....

Do you know how to pick the sweetest Vadalia onion? You want to make sure they are flat and not rounded. The flatter the onion, the sweeter it will be (that's what I was taught anyway).
So there I stand at the onion bin sorting through the onions to find the flattest ones.....

This is very easy to throw together.

Slice your tomatoes with skins on, slice the onion, take the pits out of the olives, drizzle with Kraft Greek vinaigrette, and then sprinkle feta cheese on top. Toss lightly. Oh, I also sprinkled crushed black pepper on it.

"Praise the Lord, O my soul;
all my inmost being, praise His holy name.
Praise the Lord, O my soul,
and forget not all His benefits -
who forgive all your sins
and heals all your diseases,
who redeems your life from the pit
and crowns you with love and compassion,
who satisfies your desires with good things
so that your youth is renewed like the eagle's.
Psalm 103:1-5

David's praise focused on the good things God was doing for him. It is easy to complain about life, but David's list gives us plenty for which to praise God - He forgives our sins, heals our diseases, redeems us from death, crowns us with love and compassion, satisfies our desires, and gives righteousness and justice. No matter how difficult our life's journey, we can always count our blessings - past, present, and future. When we feel like we have nothing left to praise, read David's list.
