Reminisce: Potato/Corn Cakes

How did you celebrate Mother's Day?

My thoughts on celebrating Mother's Day: To my kids: "Come and see me before the day.....because I want the day all to myself."

Is that being selfish?

I was visiting my friend Joelle's blog, and she had made potato pancakes. You will have to visit her blog, she is a down-home cook and always, always brings to my mind my childhood.


After I got my belly full on Mother's Day with Chinese restaurant food. I came home, looked in my frig, noticed the left-over mashed potatoes and corn, and automatically thought of my own mother.

My mom used to make these all the time when I was a kid. So, this is one of my mom's best.

You just mix everything together and cook the same way you would a pancake.


Place spoonfuls in a med/high skillet. Brown on one side, and then flip.

This is what they should look like.


And we always ate them with ketchup. Brings back memories of sitting around the table with my family.

Potato/Corn Cakes

2 c. left-over mashed potatoes
1 1/2 c. left-over corn
1/2 tsp. baking powder
salt and pepper to taste
2 eggs

Mix everything together with a fork, and drop by spoonfuls into a med/high skillet or griddle sprayed with cooking spray.

She was there at the beginning
When the world was new to you -
She was there to turn to happy times
Those when, you were hurt or blue.

She was there to listen to your thoughts
And when you asked, to give advice -
She was there to tell you, "Those don't match!"
Or, "Hon, you sure look nice."

She was there with you at nighttime
To help you say your prayers _
She was there to tell you, "It's alright."
When you had a dream that scares.

She was there at morning time
To get you up and out of bed -
She was there when you didn't feel good (or did)
To say, "You'd best stay home, instead."

She was there when you were hungry
And when you had those dirty clothes -
She was there when you needed her
(How she knew? Only heaven knows.)

She was there at the beginning
And she'll be there your whole life through -
She'll be there in your mind and heart
Just like a mother is supposed to do.

  1. Thanks for the mention... these look yummy with corn... never thought about that but love potatoes and corn together..gonna try these next time.... yummmm.... corn...makes me want scalloped corn.... yum

  2. I haven't made tater pancakes in a loooonnng time, and I so love your idea of adding corn too. Don't think I'd enjoy them with ketchup, but the rest looks delicious. Lovely poem too - did you write it? =)
