Passion: Pineapple Up-Side Down Cake

I have got to tell you about this wonderful, wonderful lady.

She is my Economics Instructor.

She not only teaches Economics, she teaches confidence, learning, understanding, and she is a true inspiration.

Economics is one of my weaknesses, but with this gorgeous lady applying her passion for the subject, I became comfortable quickly.

The short time that I have been attending a ground college (1 semester so far), I can clearly tell which Instructors have a passion for what they do.

This lady....she truly has a passion. Not only for her job and what she teaches, but also for her students.

I heard her say that she sent her husband on a mission to find her a pineapple up-side down cake for her birthday (he couldn't find one).

When I have the opportunity to make someone happy with food, I do it.

She received a fresh made pineapple up-side down cake.

I did drop her a hint though, "Just remember I take my quizzes and exams in pencil."


This recipe was found many, many years ago in a children's alphabet recipe book. It is the best recipe ever.

I have made many different similar recipes, but always, always go back to this one.

This one is definitely my favorite.

I added some sliced almonds this time just to dress it up a bit.

Pineapple Up-Side Down Cake

1/4 c. butter
2/3 c. packed brown sugar
1 can (16 oz.) sliced pineapple (in heavy syrup)
maraschino cherries
1/2 c. chopped walnuts or sliced almonds
1 1/3 c. flour
1 c. granulated sugar
1/3 c. shortening
3/4 c. milk
1 1/2 tsp. baking powder
1/2 tsp. salt
1 egg

Preheat oven to 350 degrees F.
Heat (melt) butter in a 10 inch round baking pan. Sprinkle brown sugar over melted butter. Arrange pineapple on top with cherry in center. Sprinkle nuts on top. Beat remaining ingredients on low for 30 seconds. Beat on high for 3 minutes. Pour over pineapple. Bake at 350 degrees F. for 45 - 50 minutes.

We may respond to discipline (learning) in several ways: 1. We can accept it with surrender; 2. We can accept it with self-pity, thinking we really don't need it; 3. We can be angry and resentful toward our teacher; or 4. We can accept it gratefully, as the appropriate response we owe our loving teacher.
Another life is short comment: Life is short, learn all you can. Accept the learning discipline with an open mind and friendly approach. You are guaranteed to learn a lot.

  1. There are no other cakes...only Pineapple Upside Down Cake. It has to be serendipity that you posted this. I'm not much of a baker but this is truly my favorite and your recipe will be on my table within days.
