Still Celebrating Spring: The Original Carrot Salad

I am still celebrating spring, and what a better way to celebrate, with carrot salad....

The orange color just says SPRING.

Don't you think?

This salad is one of the easiest salads to make, and it is very refreshing too.

The pineapple and golden raisins go very good together (there's those complements again).

Just dump the ingredients together and stir.

The dressing for this salad is just mayonnaise and sugar. Who would have guessed it would be so simple?

I used fresh pineapple instead of the canned. Fresh carrots, fresh pineapple....Oh my!!

I'm heading to the frig for more.

Original Carrot Salad

1 pound carrots, shredded
1/2 of a fresh pineapple, chunked
3/4 c. golden raisins
3/4 c. mayonnaise
1 1/2 TBS granulated sugar

Shred carrots and chunk the pineapple. Place carrots, pineapple, and raisins in a bowl. Add mayonnaise mixture to carrots, raisins, and pineapple and stir.
