I'm Going To Kill Those Bananas: Banana Pancakes

UGH!! Bananas....

When I go to the grocery store for a banana sale I have every intention to eat them before they turn over-ripe.

I also plan on the two other (monkeys) people in the household to help me out.

Do all the bananas get eaten before darkness settles in? NO!!

I had 5 over-ripe bananas on my counter, and I have been trying to find ways to use them other than the obvious banana bread, or donating them to my local zoo.

I have made smoothies and also found a way to add them into our evening meal.

Banana Pancakes

Have you ever had banana pancakes?

Well let me tell you, they are awesome.

If you haven't had banana pancakes, you are truly missing out.

Yes, I used a pancake mix. I do have my homemade recipes for pancakes, but I wanted to keep things simple for this evening.

When it comes to pancake mixes I only buy the ones that call for egg and oil. Just adding water doesn't cut it for me. I need the rich flavor.

I didn't have any oil on hand, so I substituted the oil for melted butter.

To add two bananas (which is all I had left to fight with (kill)) I followed the recipe for 20-24 pancakes (for two people, HA...).

I had left-overs, but that's ok. I place my left-over pancakes in zip sandwich bags and place them in a freezer bag to keep in the freezer.

That way when the grand kids come to visit they get grandma's toaster pancakes. They are also a solution for a quick breakfast.

My favorite grocery store had a sale on their smokehouse meats. Could I pass it up? NO!

This is old fashioned smokehouse peppered bacon from the Chief Supermarket. Excellent, excellent, excellent.

And I could only get four slices in my large skillet at a time. Does that tell you anything? No tiny transparent bacon strips here, that shrivel up to bite sized pieces.

As you can see they are sliced very think and not much shrinkage.

Do you know when to flip a pancake without peaking underneath?

My dad taught me this when I was little (and I do miss him very much).

There are bubbles (holes) that form on the top of a pancake. When the holes remain open and don't fill in with batter anymore, they are ready to flip.

Perfect pancake every time.

Now that's a stack of pancakes....

Banana Pancakes

2 mashed bananas
1 tsp. vanilla extract
2 c. pancake mix (the mix that calls for egg and oil)
1 1/2 c. milk
2 eggs
2 TBS melted butter

Mash bananas in a small bowl and add vanilla. Set aside.
Mix pancake mix, milk, eggs, and melted butter. Whisk together.
Fold in banana/vanilla mixture.
Place small amounts of mixture on a 400 degree preheated griddle. Flip when holes in batter remain open.
